Rice Pudding

1 cup White Long Grain Rice

2 cups water

1.5 cups Milk

1/2 cup 35% Cream

1 tsp Vanilla

2 tsp Cinnamon

1/4 cup Caster Sugar

Optional Toppings - Rehydrated Currents, Rehydrated Apricots, Crushed Almonds


Place water in a medium sized sauce pot and bring to a boil. Reduce heat to low and add rice, cover with a lid and cook until water is evaporated, 20 minutes. Remove rice from pot and spread out on a sheet tray to cool for 10 minutes.

In a new medium sized sauce pot add milk, cream, sugar, cinnamon and vanilla. Bring mixture to a simmer and add rice. Reduce temperature to low and cook for 10 minutes. The final product should have thickened the milk and cream mixture (resembles porridge). While hot serve in a bowl and top with any of the optional toppings.
