- 1 can Chick Peas - drained and washed
- 3 Garlic Cloves - ends trimmed
- 1/2 Shallot - peeled and ends removed
- 1/2 Lemon - juice
- 1 tbsp Tahini
- 1 tsp Honey
- Salt and Pepper
- 1 medium sized Beet - steamed or boiled (30-40 minutes) until fork tender, peeled and cut into medium dice
Place all ingredients in a food processor and blend until well incorporated. Taste and preseason with salt and lemon juice to taste.
Store in fridge up to 4 days.
