Beet Hummus

Yield: 1/2 Litre

Prep Time: 10 minutes

Cook Time: 40 minutes

Ingredients:

  • 1 can Chick Peas - drained and washed
  • 3 Garlic Cloves - ends trimmed
  • 1/2 Shallot - peeled and ends removed
  • 1/2 Lemon - juice
  • 1 tbsp Tahini
  • 1 tsp Honey
  • Salt and Pepper
  • 1 medium sized Beet - steamed or boiled (30-40 minutes) until fork tender, peeled and cut into medium dice

Method:

Place all ingredients in a food processor and blend until well incorporated. Taste and preseason with salt and lemon juice to taste.

Store in fridge up to 4 days.
